OAK trees are native to much of Canada and their nuts(acorns) are eaten by many species of wildlife(deer, turkeys, etc).. Today acorns are rarely gathered for human consumption..why? Because the bitter tannins found in the RED OAK( most abundant species of oak) make the acorns almost unpalatable........ but still edible if you remove the tannins by flushing with water as our pioneers did in the local river.

HOWEVER water extraction of the bitter tannins is now largely unnecessary as we have been working with different oak species in search of a less bitter acorn and now have some trees producing acorns with no bitterness.....and thus can be distinguished as "sweet acorns". 

Sweet acorn oak trees are selected from the burr and white oak species. These sweet acorn trees are very hardy to -40C ....Canada's coldest climates zones 1. 2 and 3.  Oak trees can live for hundreds of years and are adaptable to climate change and poor soil conditions. Not sure why these oaks are being ignored by todays nut tree enthusiasts?
